According to a report on food trends from Baum + Whiteman, a foodservice consulting company in the United States of America, the upcoming year will experience a decline in pasta and meat consumption, in turn replaced by fruits and vegetables.

The American food market, particularly in the last five years, has faced a radical change in consumer behavior, who are increasingly looking for natural and healthy products. As evidenced by Baum + Whiteman, 2016 will be a further test for food companies in the United States since consumers, more and more health conscious, are turning away from high-carb foods  and meats. Consumers are concerned with health and diet, and prefer more environmentally friendly choices than pasta or meat. In support of that, some restaurants are even classifying meat as a side dish.

For all the above reasons, new dishes will soon be popular in the United States. One of those, Poke, an Hawaiian dish, is already present in the mainland. The cubed, raw fish - often tuna - is tossed with different kinds of marinades and seasonings. Pokerias opening on the West Coast are offering other seafood poke options, such as scallops, salmon, and octopus.

In addition to Poke, the Acai bowls are spreading from Hawaii to the United States. The dish, made of frozen acai pulp, soy, bananas and other fruit, and topped with granola and seeds, is gaining popularity as a breakfast food.

These trends open up the American market to all the companies willing to import products in line with this new trend, and able to exploit this opportunity in a new and innovative way.
